Basically choose composite (yellow cable) for gen 4 and earlier and RGB for all generations after that 
I think that's correct. Does HDMI count as RGB? idk. But yeah erm, I learned recently that the 'Cube and Wii were shipped with composite which was silly because it made the games look blurry. My Saturn and Dreamcast came with RGB (Scart) so were much crisper!
Also if you use these higher quality cables with gen 4 (Genesis) and earlier then it it too crisp and some of the visual effects break.
