Soldier of fortune 1 & 2 have the best gore

These games are old, but the gore is satisfying and screams of npcs are also good

Each limb can be chopped off
Even grenade can send glass flying and gut someone so they choke blood

Also flamethrower is satisfying to use

The GHOUL gore system in this game was insane at the time.

There's still not much that could match it today. Very sad to think about how games haven't really progressed gameplay wise.
