Because making a game with interesting storytelling, entertaining gameplay, and willing to experiment is expensive in addition to time consuming.

Because of this, AAA companies would much rather go for cheap shock value and slop to push it out the door as quickly as possible rather than spend the time on actual creativity or take the risk of breaking new ground.
