It's often lauded as one of the best video game remakes but I disagree.
In my opinion, Super Mario All Stars is an incredibly bad remake in terms of actual gameplay. The physics are just worse. Super Mario Bros 1 and 3 feel way worse. Especially 3. The original 3 on NES was floaty and precise which allowed for you to make very tight jumps. Super Mario All Stars feels stiff and slippery in comparison. Graphically, there's many downgrades in regards to art direction. In the original 3, the airships had more diversity when it came to their backgrounds. In All Stars they all take place during the night which makes world 8 feel less unique.
All Stars skewed my perception of 3. I originally beat 3 through the all stars version on Wii, and while I did think the level design was excellent, I disliked the physics. When I replayed the nes version, it became one of my favorite 2d platformers in terms of controls.
I wouldn't suggest someone start with the All Stars version 3. Especially since we live in an era of save states where you don't have to play the All Stars version to save your progress.
