The series try very hard to make you feel pity for her, but the acting is forced and bad. I had to skip some episodes, asking ChatGPT for spoilers, and when I finally finished the second season, the anime got dumped.

I watched Mushoku Tensei before Re:Zero and had a similar problem: first season was great, second reason was crap.
In the second season the anime changes to a college arc that is more suited for normies. It looks like it wanted to mimic Harry Poter or something, stuff made for foids.
Looks like Isekais always crap out in the second season, because the protagonist end up as a shounen chad.
Another bad feature is that the characters have to constantly describe their feelings, because the normie scum can't see nuance.

Maybe its just me, but after season 1 the focus on his relationship with Emilia is way too much to the point where it dilutes his character. There is nothing wrong with romance, but I just feel that Re Zero would be better if Emilia was a subplot instead of the main focus.

With Season 1's dark tone it could've had an existential theme which would fit it so much better than whatever this "I love Emilia" slop is.
