Maybe it's because you can do a lot with games now. In a late '70s arcade there wasn't much room for an immersive storyline, for example!
But also maybe a lot of the AAA games... long cutscenes allow them to pad out the game and also put in more political messaging.
It's hard to do that in a simple and more arcadey game like... I dunno. Sonic Mania or Roblox Jailbreak or Geometry Dash or whatever.
It's weird for me when I see most AAA and AA games these days and so much of them is cutscenes or something close to "Press A to continue".
