Because if they used love instead of sex they'd implicitly recognize us as entities who feel emotional needs and are totally capable of experiencing solitude on a deeper level. This wouldn't allow them to dehumanize us like they do when using the word "sex". This way the incel becomes nothing more than a rabid animal whose motivations are only led by very basic and lower instincts. The incel in their strawman can't feel solitude because of his incapacity to conceive the other as anything more than a sexual toy to abuse.
