why do turkish people make their meat on kebab so fucking chewy

Anathema to them, why is Turkish lamb too chewy to fucking eat on a kebab.

I ordered 2 kebabs from turkish restaurant and it's taken a SINGLE hour to chew down the fucking food because the meat won't fucking break down.
