We can't be 100% sure but most probably latin sounded like italian does today as in every letter has only one "sound" so by reading any word you almost always would know how to pronounce it letter by letter

Not necessarily, the soft c that sounds italian is rather middle age latin. Supposedly ancient latin had a harder c like german. BTW yes, latin Is the ancient language we know better

Eh, to a degree; the process of language reconstruction is based on the compiling of similarly sounding words and finding a common ancestor- this goes for many aspects of whatever language is being reconstructed. PIE, for example, is a hypothesised common ancestor to all Indo-European languages and thus common culture and blood as well. Sumerian is a language isolate so its' more difficult; we have to base it on semitic roots.
