Me and @thefinalizer used both Matrix and Simplex the only problems was that we found that Matrix's UI was kinda ass and Simplex doesn't allow multiple devices to share a profile.

Yeah they all have some problems, I've always found the alt messaging apps to be quite janky feeling but I just get used to it over time
Yeah, imo best is probably matrix (for now) even though the UI sucks if you can find a good homeserver that isn't gay with it's policy unlike the main one, you should be fine.
