Yeah, the fast food industry as a whole has been struggling despite the popularity of doordash/ubereats. Part of it is people are becoming more "health conscious" which often means going for options that have the illusion of being "healthy" (when they're anything but) but fast food doesn't even have the illusion of being healthy.
But the main reason is the cost. Low prices were the main appeal of fast food, but fast food is simply not cheap anymore. One thing they're doing in an attempt to bring down costs is having less employees, so for example, 4 employees would be doing the workload that 6 employees were doing years ago. This makes the job more stressful and also more competitive since it means fewer positions.
That said even if an industry is doing well, that doesn't mean getting a job in the field will be easy. I've applied to work at amazon warehouses multiple times and never heard back from them. Really everything has become hyper-competitive.
In order for it to be easy to get a job in a field, that industry has to be booming and there needs to be highly technical requirements and a lack of people who meet those requirements. The AI field is like that now, but given how popular AI is, it won't be like that for long, and the market will be as oversaturated as everything else.

I guess AI would be a good example. Prior to chatgpt, Google was far ahead of everyone else as far as AI but they weren't giving the public access to it. When chatgpt came out, it forced google to start shipping their AI models.
Now the industry is evolving pretty quickly, whatever model is at the top (measured by benchmarks) usually get usurped within a couple months.
But in general, you're right about most industries not innovating. Video games, movies, anime...hell, the entire industry hasn't innovated in a long time. It's all clones, recycled plots, tired tropes (or worse, using overused tropes irooooooonically), or just milking a decades old franchise because nostalgia sells.

One of the latest rabbitholes of hyper competitiveness I recently encountered was computer and software use, not gaming specifically but fucking operating systems as well, we have operating system elitism, first was windows and dos elitism now people are acting like linux is elite, even after you move to an entire different eco system, there is also an internal scheme of elitism within it's community and people would unironically say things like gentoo or arch is the greatest distro or you should use vim or emacs otherwise you have a "skill issue" then you figure out there are much worse stuff and more retarded unhinged people out there who went too far and unironically use oses like openbsd or even fucking menuet as a daily driver, the scenario in this example perfectly demonstrates that in every topic or hobby there is an open loop of hyper competitiveness or neijuan, where people are constantly and endlessly competing for "what and who can be the most elite" or more importantly " what would impress the most" and it doesn't end.
(Maybe or maybe not related) I can tell you this job market "neijuan" as you called, or hyper competitiveness hell has even caught up every spot that is populated in the world.
I'm from Baghdad, Iraq a 4th world shithole that many people aren't aware of it being the 4th highest population density after Philippines shitholes and one of the funniest things that I've seen a couple of years ago was a successful pastries and sweets shop chain/brand inquiring for accountants to hire and the hire offer was so absurd, way more absurd than the things you listed with your your fast food experience.
They were basically asking for an accountant to have a minimum of a doctorate degree and a 10 years experience in global banking, for a sweet and patisserie shop chain just because it is successful selling baklava locally. the worst part is they eventually found people, of course they did and that's a patisserie and sweets/bakery chain in a 3rd world shithole advertisment for hiring from 3 years ago, let the absurdity of that sink in.
