Yeah, the fast food industry as a whole has been struggling despite the popularity of doordash/ubereats. Part of it is people are becoming more "health conscious" which often means going for options that have the illusion of being "healthy" (when they're anything but) but fast food doesn't even have the illusion of being healthy.
But the main reason is the cost. Low prices were the main appeal of fast food, but fast food is simply not cheap anymore. One thing they're doing in an attempt to bring down costs is having less employees, so for example, 4 employees would be doing the workload that 6 employees were doing years ago. This makes the job more stressful and also more competitive since it means fewer positions.
That said even if an industry is doing well, that doesn't mean getting a job in the field will be easy. I've applied to work at amazon warehouses multiple times and never heard back from them. Really everything has become hyper-competitive.
In order for it to be easy to get a job in a field, that industry has to be booming and there needs to be highly technical requirements and a lack of people who meet those requirements. The AI field is like that now, but given how popular AI is, it won't be like that for long, and the market will be as oversaturated as everything else.

I guess AI would be a good example. Prior to chatgpt, Google was far ahead of everyone else as far as AI but they weren't giving the public access to it. When chatgpt came out, it forced google to start shipping their AI models.
Now the industry is evolving pretty quickly, whatever model is at the top (measured by benchmarks) usually get usurped within a couple months.
But in general, you're right about most industries not innovating. Video games, movies, anime...hell, the entire industry hasn't innovated in a long time. It's all clones, recycled plots, tired tropes (or worse, using overused tropes irooooooonically), or just milking a decades old franchise because nostalgia sells.
