I'm not a specialist by any means but I did do my homework.

Basically, there are two main branches of biblical texts, the Alexandria ones (used by catholics) and the Antioch ones (used by many of the prostestants/non-catholics in general).

I believe the second to be the preserved word of God. Which culminated in the 1611 KJV, translated from it.

As for the canon, people talk a lot about the catholic consils and all, but it's actually way easier than most people think. Jesus confirms pretty much all old testament books, Jesus confirms the apostles, the apostles then confirm Paul and then it's over. Only people who actually saw Christ back then are apostles, there are no apostles anymore and no new revelation needed since we're still in the church age since the first century till now.
