My two big copes are cooking and fishing.

Cooking has a lot of depth to it. If you get some serious cook books there is a lot of theory to get lost in and learn. Baking in particular is almost a science.

Fishing is just about an endless activity. Gets you outside, gives you reasons to go somewhere you have never been and its one of the few hobbies where second-hand equipment is just as good as brand new stuff. A lot of theory to get into as well.
