I've never understood why they accept evidence for all types of sciences, statistics for everything except incelism.

You will literally give data based on height filtering on dating apps, sperm banks rejecting sperm from men under 5'9, the statistics of white men being much more successful than for example Asian men in marriage.

The response?

They completely brush it off and give an unrelated, unverifiable anecdote that somehow disproves the wealth of evidence we provide.

Why do they do it? Is it conscious of subconscious? Or will we never know...

They don't as strange as it might sound. When you are arguing with people, it's less like a yu-gi-oh of who has more "evidence," but more the conflict of opposing views. There isn't such thing as "evidence" only data that you interpret through your worldview.
