I do like Hearts of Iron III. Playing as Germany, I conquered the Soviets and occupied Britain, achieving victory conditions and playing on a little. Invading North America was tough though. I usually end up losing interest and playing the early part of the game again. The final expansion pack had a custom game which made it easier to build your army and technology from scratch and steamroll the opposition.
