I'm a software developer, web specifically. When you share a Youtube link, you are not just sharing the video but also the tracker.
Example:
When you share the link, you are sharing a tracker that tracks:
1. Your youtube accoiunt, who created the sharing URL
2. People who clicked into it, and their youtube accounts
3. The redirect URL (for example it can get where you came from, for example if you clicked the url from this site)
4. Now they have a map of data, the creator and other people who clicked into it.
POSSBILITY
I cannot confirm this, but when you embed a video here via posting a URL, people automatically connect to youtube to get the preview, therefore being subject to tracking without even clicking into the URL.
EDIT: You should be safe.
It can still get where you are coming from, but I assume youtube-nocookie is actually what it means, otherwise you can sue youtube for it. Not too sure about ytimg.
