The nemoidians definitely had chinese accents, but they never did anything which would imply they were meant to symbolize asian people. Back in the early 2000s you actually had to do something unambiguously racist to get called a racist.

Regardless of race, it's no coincidence that the Separatists were aliens, and represented planets in the Outer Rim (which is analogous to the 3rd World). Also consider how Sidious had the Separatists use a disposable droid army to stage a war, which is analogous to America being incahoots with ISIS to profit off wars and gain power in the middle east. The droid factory on Geonosis ran by the insect creatures is like the Chinese sweat shops filled with underpaid workers that Americans profit off of.
