In the real world they always work through agents and intermediaries. Neither the client, nor the ones who are contracted know about each other in any way, shape or form in order to minimize risk and exposure. The film that closest depicts this world is The Mechanic, although it's usually small teams (not one or two hitters) covering multiple roles (surveillance, logistics, technical etc.).
