Rockstar games seems to make "ugly versions" of the actors that play them.
They give them smaller eyes, crooked noses, thinner off center lips misshapen heads and smaller chins and shorter midfaces.

Why do they do this?

i think it's to give a more 'cartoonish' and over exaggerated look that matches the tone of the game.
 
And then there’s Red Dead Redemption 2 with basically all heroes being Chads. Arthur, John, Dutch and oldcel Hosea with chiseled jawlines

What are you on about? The left are professional photographs with direct lighting that washes over facial texture. Take your photo outside in daylight and take your photo in poor lighting, you will notice the difference. The in game faces arent asymmetric, thats light source hitting from the side. Eye areas were most likely adjusted for facial animations sake. Squinty eyes arent good at transmitting mimicry.

to be fair, that game was released in 2013
 
that's just due to the limits of 3d modelling, striving for realism while having no sufficient tools to make the characters look 100% life-like creates an uncanny valley effect.

But the asians are most brutal. The female asian has 2 different shaped eyes on her character and 1's higher than the other.

The male asian his face is being pulled to the upper left, his eyes are 2 different shapes and his head is oddly shaped.
 
He's not pulled, that's light illusion.
