Do your groceries with a big backpack, preferably one with a thin, solid, back pocket along the main part. Go take all your items normally but if you have a thin item, like a chocolate bar, let it slide in the thin pocket. Make sure that item doesn't have a detector, it's usually a white paper/sticker which is slightly more thick than the rest of the packaging. Checking for that while the store would be too suspicious, so buy the item in mind once, then check at home, to see if you can steal it next time. Then go to the self checkout and scan all your stuff, except the one(s) in the thin pocket, as if you forgot it/them.
Then walk out out and pray there was indeed no alarm on the stolen item, and that no security guard checks you bag. (This is why you should only start with just one, if it beeps you just apologize and pretend you forgot it, then go pay it back.)
If a guard ask to check your bag, don't refuse. Instead, let him and pretend to be confident that you didn't do anything, so that if he finds something, you can pretend you forgot, that it was a mistake.
You should start small, to train yourself, to be smooth and not obvious, to not stress.

Ah, I forgot one thing.
If you get caught, never admit this was on purpose, tell them it was a mistake, that you forgot to scan that/these item(s). If you admit stealing, you will be in big troubles, but as long as you claim it was a mistake, they can hardly do anything about it.
(Of course to argue it was a mistake you have to be smooth when slide the item in bag, they have cameras, if they see you spending 10 minutes hiding carefully an item in your bag, it will be obvious.)
