I have a fantasy of really fucking up my work place before quitting, such as trying to delete all our shared files and such, I feel like there are some things which I could permenantly delete if I manage to get a hold of some shared tablets whilst having my own laptop.
And maybe data collected by surveying instruments I could delete.
If one day I were to do this would I risk breaking any laws?

Super illegal. It's not a crime to be an incompetent dickwad and to leave the things you worked on in disarray, forcing them to spend man hours fixing that, but a) burning bridges does not help you in any way, most likely it will come bite you in the ass later on and b) plausible deniability means balancing on a razor blade.
 
Report them to the IRS for an audit, it’s not sabotaging, just a pain in the ass to deal with

Double this up by reporting every rule violation you know they commit to the proper authorities (i.e. environmental, sanitation etc)
