cuz religions like Islam and Christianity were invented to control others on a massive scale so if someone left a religion it's a bad thing for the creator of the religion and others using it to control others and Islam is just more strict about not letting people leave so they made a retarded command telling others to kill anyone who leaves the religion. Christianity has this too but it's less extreme which is that you'll burn in hell for all of eternity if you leave or don't believe but to be fair Islam does have that too.
