i totally get it its one of those games you might need to play a similar paradox title to get into. you could try ck3 if you havent and its a lot more beginner friendly personally i never understood hoi4 (still dont) until i played ck3 and logged a few hours then i got addicted because a lot of the paradox games share some elements that help you learn other titles from the publisher
im really low iq, it took me like some months to kind of understand how to play, and after i learnt how to play there was an update and germany strats changed completely so i couldnt do shit anymore and gave up.
I switched to Eu4 because it's easier
I played Age of Empires and Age of Mythology as a child. I remember them being fun. But this game was just stressful.

They start off with a decent industry and military, and are in a war with Ethiopia in 1936, allowing you to learn how land combat works. Italy also has a big navy, which can be useful in learning the naval system.
I also recommend Britain as it’s pretty safe from land invasions and has unlimited resources from the colonies.

But it does has a very good focus tree, industry, and generals. Its geographic position and war goals are what make it hard.
germany. easiest one, even post-gotterdamerung update. doesnt face any type of danger of invasions, completely dont have to go the ww2 chronological timing with anything so you dont have to stress at all, can literally be sitting there building civilian factories till 1945 and max out research (although i wouldnt recommend it though its really boring that way and youd run out of building slots really fast for anything else.) and also fairly weak neighbours with mostly flat terrain
other nations like USA or soviets which are strong aswell, kinda have different difficulties behind them and i wouldnt really recommend, they aren't really meant to be that aggressive, especially with usa until 1940 or so. soviets have to deal with lots of debuffs till 1941 i believe, and by then, germany is doing barbarossa so youd have to dig in on the defensive.

also btw vanilla is always boring, paradox kinda makes everything look and feel very bland. id recommend playing with mods
age of mythology is so based the remake was ehh (or was it a remaster? not sure)
I find hoi4 to be horrible, personally. Least favorite PD game.
I used to love it but ever since they limited the dlc packs, it's been brutal.

I would recommend Bitt3rsteel's tutorials. They are fairly short and simple to follow.
