Typically you can only be committed if you are a danger to yourself or others
Or if you are unaware of your surroundings

Doubt you can escape from a hospital because you will be drugged and locked up/restrained

Might have to leave the country.

If you are actively being pursued they will put you on a list and you won't make it through customs

Also you would need a ton of money (or a job) to be able to survive abroad
Also you can't just stay in random countries forever without a visa/citizenship
Also the US might be able to void your passport even if you are out of country

You could just lie and pretend you're healthy after you get there. Where I live, they only hold you for a week unless you're a threat. Even if you are a threat, you can lie and say you aren't. I blamed alcoholism and it worked for me just fine.
