Here's how I would've handled a next generation Monster Hunter game
1. Story
Story would be a less important element. Similar to the classic games, the story would focus on a large flagship Monster terrorizing a village. The story would climax with you defeating it.
2. Gameplay
Open world is definitely the way to go. As much as I like classic MH, I can't deny that not being limited to individual closed in zones is an upgrade. However, a major problem with new Monster Hunter is that Capcom has completely removed the hunting aspect by allowing you to instantly locate the monster via the map. The solution imo is to reintroduce tracking from World to initially discover the monster. However, remove scout flies and make tracking more immersive.
When you locate a monster, you can then continue to track it via blood trails, or use a paintball to skip tracking completely.
To bring back challenge, monster speed would be significantly increased and you wouldn't have access to unlimited resources at your camp.

Almost every Monster Hunter generation has had a major gimmick. The best gimmick for a new generation imo would be the introduction of underground sections to each map. These underground sections would feature different wild life and monsters.
