They're provoking you to beat their ass. They know they have numbers on their side so they're imagining they'll have superhuman strength and be 10 steps ahead, you'll be frozen in place while they do the exact right thing, etc. If you're going to beat their ass, you have to go about it a certain way to protect your criminal record. Know your local laws.

But figure out how to do it legally, or in a way that is difficult to prosecute. Know how to talk to the police in your country for the best result. In America, "I need to speak to my lawyer" is the magical win button, probably not the same elsewhere. Never say anything to police except that they attacked you as a group and you defended yourself. This is an important detail because everyone but the mocker will present themselves as witnesses to the police.
I have worked out how I'll do when the opportunity arises. The goal is to render any video footage useless by making it open to interpretation. Disguising movements an innocuous, disguising strikes as defensive maneuvers, and striking at targets people don't usually point their cameras at.
I wear glasses, so I can put up a guard to protect my head and disguise it as adjusting my glasses. From there, I can strike with minimal motion, which will likely show up on camera as the guy flinching for no reason. Also people always point their cameras at people's faces and upper bodies; a push kick at the leg just above the knee won't show up on video, especially if it's a one-time thing.
Once it's a fight, then use everything you've got. What's important is that the beginning of the fight is hard to pin down.
