The Ultima series, old but gold. Ultima 7 is fun to play.
One of my fav RPGs ever is prolly Fallout New Vegas (if you look for detailed roleplay possibilities, you can make a ridiculous amount of different builds in that game). The Elder Scrolls is good too but Morrowind is the best one.
Then there is also more combat based RPGs like The Witcher and Dragon's Dogma.
Not really a pure RPG but I like the Monster Hunter series too, really addictive
