The yellow glob is polenta or boiled cornmeal and the sausage is a Bockwurst filled with cheese! 
In one corner we have some bacon and the red puddle is some Blutwurst, that actually was the kind you boil. Blood is blood, tastes great!
The way you eat polenta is that you put cheese in it and make a fondue that you eat with the cornmeal, because the cornmeal is piping hot when you put it on the cheese. It all melts and becomes a creamy combination of goodness.
