i've been trying to cook for myself for a while now but i'm overall lazy and inconsistent
i've been struggling as well to make fries the right way for a while now until i found the method
its what these kitchen niggas call double frying method that makes fries be better than regular McDonald's
i had McDonald's only once in my life and i thought it was overrated soggy flavorless and expensive
kinda got disillusioned with American food after that like how japs get after visiting Paris for the first time
This the process that i use to make them
cut the potatoes into shoe string shape a finger kind of thickness if you don't want it too dry and crispy inside out or more and rinse them in cold water until water is clear
boil with salt and vinegar potatoes until you stab them and they fall off the fork basically show no resistance when force is applied to them potatoes.
after than cool them
after its all cooled to room temperature and its not hot still
make a mix a 1:1 ratio of water and cornstarch or potato starch those that niggas got psyop into eating (following video is related)
dip the already cooled potatoes into this batter until it gets all coated and set it aside to harden
after harden the mix into the potato sticks its time for the first fry
heat up your oil to 280F 140C for the first fry,
this should be done in batches, for me whatever i can fit on one hand is enough for the batch
hold the temperature usually if you dump a handful of potatoes in the pan the temperature drops
it will be ready to take out when light golden no more than 5 minutes each batch don't let the temperature rise too much
when you get all of them fried you can put them in a bag and throw in the freezer until the next day for enhanced much superior taste
now if you're a nigger and can't wait, you can dump them as soon as you finish doing the first frying into the oil again
you wanna 2nd fry them frozen for 12 minutes 338-356F 170-180C
as soon as you take them out of the oil after the second frying stage season it to taste while shaking it up
my taste:
paprika
salt
pepper
garlic
oregano
Pick a oil:
hydrogenated oil
sunflower seed oil
cotton oil
or anything that has a high smoke point oil
