The only reason it persists in the US is because a religious fundamentalist named John Kellogg (The same guy who founded the Kellogg cereal company) latched onto and promoted the practice as a cure for various dubious medical claims during the 19th century and because people like to hop on bandwagons, it stuck and nobody really can think of a good answer as to why it is done so now people have been trying to come up with post-hoc justifications for it ever since, much like how trepaning and fletcherism used to be all the rage for awhile, too.
