Just wait for them to attack -> roll or walk back/backstep and then come closer and attack. It's not that hard. You can always grind levels, upgrade your weapons/armors to make it easier.

i think a main thing is that my attention span is so bad now that i cant try bosses over and over

Some fps drops but never lower than high 40fps so super playable, we will see in other areas or vs bosses it may become very unstable with frequent fps drops and stutters.
