We all hear about different types and preferences, but in reality attraction is actually near universal.

There are outliers. Such as very rare women who like obese guys and skinny guys, but even those women will demand their outlier also have universally desired traits like height and good facial bone structure.

The real confusion comes when a short dude with a decent frame and good facial bone structure is considered attractive at the same time as a tall dude with average facial bone structure. They look different but they are both universally desired for universally desired traits, just different ones.

My guess is that their uniqueness and rarity makes them more valuable, because only a small subset of males have these traits so they prefer them over the majority of men.

True. And foids always act like "everyone has their preferences" but when you break it down it's always the same traits getting picked: height, facial structure, frame, etc. Preferences just mean which of the top-tier traits they value slightly more, as well as some minor quirks that they may like. Still the same gene pool winning.
