Jack Nicholson may not be a Chad but he still has many appearance-based features that make him optimal for acting. Notice how his roles aren't about the character being "Hot" or "Young" but instead about the character being a Father/an evil business manganate/Therapist/Advisor. A 20 year old Chad would not fit for those roles but he does.

A sub5 curry male would be laughed at if he took on these roles.

And he got selected to perform as Goodman because he fits the image of a slick-talking, scummy and Jew-like backstabbing lawyer. Chad wouldn't exactly look natural in that role.
