I mean, men still watch anime when they're 21-26 because the characters are often around that age, but I don't remember any good/popular anime with middle-aged characters (30+).

I'm watching it less and less as I find the young characters less and less relatable. Anime is for idealistic youth that's why it has such a simplistic yet energetic and over dramatic view of life. There are better copes for adults

I am already finding it hard to watch in mid 20s and only watch stuff I watched in my teens due to nostalgia that I have to turn off midway through, I despise the optimism, paperthin characterizations, teenage novel level writing and most of all the youth and school settings (that have the double whammy of appealing to old and young, very cheap trope to broaden an audience) that only really try to explore things from a japanese, probably low inhibition and autistic normgroids perspective, throw in a cuppa just world fallacies and platitudes about work ethic and collectivism and you're really in glorious nippon steel mode.
Watch some Kurosawa or kobayashi movies instead if you want a distinct japanese flavor but with actual engaging themes, should appeal more to us westerners especially the ones that are based on shakespeare.

I have the opposite impression. Normies have already normalized watching anime in your 20s, and being knowledgeable about anime is considered cool.

When I was 22 and said in a college class about "Intercultural Study" I can understand and read a bit of japanese because I read and watched a lot of anime/manga most other dudes my age were laughting.
I have stopped watching and reading it all. Most of it is slop anyway and a waste of time. Tho I still follow One Piece and Versus sometimes. Tho its not even close to as hardcore as in my late teens. Around 16 i got very interested in all kinds of anime/manga - girls too. It was actually nice talking with my female classmates about One Piece and Death Note.
Unfortunately I aint a anime isekai prettyboy so I never got a real life harem as they do...

Uhm...not the teacher was laughting it was the other guys in my class who were in their 20s and laughted about me understanding japanese and being able to read a bit of kanji because I told them I watched and read a lot of anime/manga.
