If a 9/10 RE4/OOT/Mario Galaxy tier game were to release I'd gladly spend more money on it. The problem is that not only are games more expensive now, but they're usually mediocre to ok at best and lacking in content.
The new Mario Kart for example. I guarantee that the base game will be lacking in content and Nintendo will solve this within a year by releasing dlc, just like they did with Mario Kart 8. The game itself will most definitely not be worth $80.
Releasing complete amazing games just doesn't garner as much financial success anymore. It's more profitable to charge 70/$80 for the base game and then release a $20-$50 dlc a year or two afterwards.
This is what Capcom did with RE4 remake. They intentionally removed content such as the U3 boss and laser room from RE4 so they could add it to the dlc.
Why release a full game stuffed with content when you can cut half of the content out and sell it down the line as dlc? Or god forbid day one dlc.
