Simple explanation is the chinese were starving so they went out to the forests of china to see what they could find to eat. The fortunate ones found edible game, the others started eating rats, dogs, cats, pigs anus, anything really. So what happened then is some Chinese started to use spices and herbs to cover up the nasty meat they were getting and that is how "traditional delicacies" were made.
