I would say 25, a lot of people start being trully independent at that age, with a real job, etc. It's also the age a lot of us start balding. If you havent roped at 25 you might as well just never do it

There's the idea of "The 27 Club" from a bunch of celebrities who died at 27, in which case 28+ could be argued.
30 is a convenient round number. Any number is going to be kind of arbitrary, so that's a fine one.

Late 20s are possibly ok, the problem at that age is even if you do ascend, like a people I know late 29 and 30 did, she wanted kids straight, u already missed out on all the fun you should have had with her in your 20s, also after one of my friends got her pregnant she stayed fat and divorced him within 6 months of giving birth. I would not really call that ascending, he also lost his house and is now paying alimony. I think staying single would have been a better option.

Real oldcel territory is 30+. Not just saying that because I happen to have passed it myself recently, but "30yo-crisis" is a thing even in normie culture for a reason.
It is certainly all down hill from 25 onwards but you can't really claim to be old until you're 30.
