Max Payne 1+2, XIII, FFX, Deus Ex 1, HL2, Chronicles of Riddick, practically any game on Id Tech 3 and on Id Tech 4 (Doom 3 still holds up), not exactly 2001 but i liked NOLF, Rayman 3, Warcraft 3+FT, Time Splitters 2, GTA 3-SA, Total Overdose, NFS Underground 2 (Most Wanted looked worse), Halo 1/2, Colin Mcrae 04/2005, Gran Turismo 4, Unreal Tournament 2004/Tribes: Vengeance, Prince of Persia 3d trilogy (but liked looking at the TT the most), Fable 1, Jade Empire, GUN (xb 360 version), Tekken 5, Rollercoaster Tycoon 2, Zoo Tycoon 2, Dawn of War, Age of Empires 3 (1 and 2 aged way worse)
I have massive bias for PC games since i have never played Metal Gear/Solid games (besides 5 and MGRR) due of them being shooters but require you to use dogshit controller to aim. Fuck off Konami and Kojimbo, you may add them to the list they look really good for it's time but bad controls completely ruined it for me.

Forget to add a couple of Sega titles but you could find them on your own, and some console exclusive games now run really well on emulators
