Everything. They have plough animals to help with heavy field work, but literally everything they do is done by hand with no shortcuts. Think about doing a task around your house, difficult with power tools - imagine doing it with hand tools. Farming itself is pretty back breaking labour, and that is probably what most of them spend most of their days doing.

apparently ya'll are not aware of the Amish Rumspringa or Rite of Passage, whence they turn 16 they can choose to go to a big city for two years and experience life with cars, tv, cellphones,illicit drugs, alcohol, unprotected orgies etc... fill in the blank. Of those who chose this path, 80% will come back and become full members of their faith, and 20% leave the Amish culture.
