Maybe pancetta is more easy to find than guanciale, here you can easily find ready-made pancetta in supermarkets' shells, while guanciale has not the same spread.Based.

100 gr. of spaghetti n. 5 Barilla (or as much as you want, I eat generally 200 gr of it fo example)
1 fresh egg (important: the number of eggs to be used varies according to the grams of pasta, I generally use one egg for every 100 grams of pasta, so 2 eggs for 200 grams of pasta, 3 rggs for 300 grams of pasta and so on, according to the "classic" recipe you should only use the yolk but I also use the egg white to bind better)
1 package of smoked pancetta
parmigiano (as much as you prefer, I generally use 2 spoons of it in the eggs and other 2 spoons after I unite eggs with pasta)
black pepper
PREPARATION:
First of all, start by preparing the dressing: take a deep enough dish according to the amount of pasta you intend to consume and beat the egg (or the eggs) with the parmigiano (I put two spoons of it at this stage, as I said before) and a sprinkling of ground black pepper to taste.
After you have done, put the pot on the fire with the water and when it starts to boil put two tablespoons of salt and the spaghetti (I break them to be able to mix them better, you can put them whole). Important: stir the spaghetti often during cooking to avoid they sticking and becoming inedible shit.
Meanwhile, when the spaghetti arrive about halfway through cooking, cook the pancetta and turn off the heat as soon as it finishes browning well.
As soon as the pasta is al dente (or in any case before it is overcooked) drain the water from the pot in the sink and put the spaghetti to rest in the colander for LESS THAN ONE MINUTE (if you leave them more they become glue) and then add it to the dressing you have prepared with eggs, parmigiano and black pepper: this will prevent the egg from becoming lumpy due to the heat.
At this point put two more spoons of parmigiano and another sprinkling of ground black pepper, mix and add the pancetta from the pan, the result should be more or less like the pic I posted before.
