I made some eggs this morning and they were pretty good.
Here's what you gotta do.
Fry up some pork bacon in a pan, toast up some white Italian bread.
when the bacon is done cookin', pour some of the bacon grease out of the pan so that the skillet is just lightly coated with grease. turn off the heat.
take some whipped butter (not salted) and add it into the pan. crack 4 eggs and whisk them together, put some rosemary and cracked pepper into the mix.
turn the heat to very low and add in the eggs. continuously stir the eggs very slowly and when the eggs are still creamy (about half way through) you can add in some pecorino romano or parmigiano.
continue cooking the eggs until you're satisfied with their texture, but don't overcook, they should still look very mushy. now, add in salt.
put the eggs over the toast. serve with a cup of hot joe and some bacon.
