If the material is responsible for creating our personality's, then who are we outside of them?

How do we know we are not God's consciousness living out the life of a human being?

We must be observers of some sort if everything is taken away from us.

Sure all of our brains are limited in some way based off of our own genetics, but if consciousness exists outside of death then how can we think this way?
 
What do you guys think will happen to your consciousness once you die?
