author hasn't done a good job justifying why Subaru was insanely self-sacrificial for Emilia since day 1.

And he is self sacrificial because he can afford to be, he has the power to change the fate of people he cares for.

she'll never know 1% of what he sacrificed for her either and she's basically lobotomized to him since doesn't remember even 20% of the conversations they had (some very important ones too).
He's dying for everyone he met and holds dear in his new world. "Somewhat" is an understatement, the world would've ended without his actions several times.

After episode 15 he's very much aware of it. I think it's expected for a character to develop and grow as the stakes become higher. And Subaru did just that.
