The side stories are also worth reading, Gluttony and Sloth are the best IMO

I don't think so, it's just that at the beginning Subaru treated the new world like a game and was certain that his goal was to make Emilia love him. If you consider the first loop, which is the one where Emilia saves him and they spend time together in the capital, you can clearly tell she was reciprocating his feelings. The biggest indicator is the way she held Subaru's hand tightly when Elsa gutted them both. That's why Subaru fell so hard for her.
