The more the beef is lean (the one in the video is a fillet, so a lean cut, from an already lean beef) the less it has to be cooked. There are beef races like Wagyu that are DISGUSTING if served below medium-rare, and it's already a dare, i would order it medium. Other beef races like Fassona Piemontese, viceversa, has to be served RAW. Others, like Angus, are more versatile and depending by the cut you can have it the way you want it. It depends.

@ADHD_cel The only small issue i see in the video is that the maillard outside the meat isn't perfect, i would have liked a more crusty outside. I didn't expect a Michelin star to do such mistake. Still, i rate this a solid 8,9/10
