Here's a simple chicken biryani recipe:
**Ingredients:**
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 2 tablespoons biryani masala
- 1/2 cup plain yogurt
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, chopped
- Handful of fresh cilantro leaves, chopped
- Handful of fresh mint leaves, chopped
- 4 cups water
- Salt to taste
- Ghee or oil for cooking
**Instructions:**
1. Wash and soak basmati rice in water for 30 minutes. Drain and set aside.
2. In a large skillet or pot, heat ghee or oil over medium heat. Add sliced onions and sauté until golden brown. Remove half of the fried onions and set aside for garnish.
3. To the remaining onions in the skillet, add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute.
4. Add chopped tomatoes and cook until they turn mushy.
5. Add chicken pieces to the skillet and cook until they are browned on all sides.
6. Stir in biryani masala and salt. Cook for another minute.
7. In a separate bowl, whisk plain yogurt until smooth. Add it to the skillet and mix well with the chicken.
8. Add chopped cilantro and mint leaves to the skillet.
9. Add soaked basmati rice to the skillet and gently mix with the chicken and masala.
10. Pour water over the rice and chicken mixture. Bring it to a boil.
11. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes or until the rice is cooked and the chicken is tender.
12. Once done, remove from heat and let it rest for a few minutes.
13. Garnish with the reserved fried onions and additional cilantro leaves.
