I'm suprised at how supremacy mellow it is for it's strength.
The recipe is:
2x 12oz jars of non gmo organic blueberry jelly from France.
1 packed cup of brown sugar.
1 packet of fast bread yeast.
One gallon of filtered water.
( In a fermentation vessel with a standard airlock.)
Time: apx three weeks.
Really good stuff.
I think its the anthrocyanins (sp? / blue color) That give it a tannin like flavor. Very tart and perky.
Not at all clingy like the strawberry wine.
