If you gave me an IQ of 100 and I could start over, I think I would pick something like electrician. 100 isn't really high enough to be a lawyer/doctor/engineer, at least not a very competent one. 100 is fine for a basic corporate office type job, but I wouldn't want to do that because everyone I know who works such a job absolutely hates it. Working extra hours without extra pay due to making salary instead of hourly, constantly having to go to meetings outside of normal working hours, office politics, sounds like hell.
If you gave me an IQ of 130, then it would depend on if I had "hindsight knowledge".
If I had hindsight knowledge, I'd get into machine learning. Top AI engineers are making bank and Google/meta/anthropic/xai are trying to poach top talent by offering multi-million dollar contracts.
But if I didn't have hindsight knowledge, if I followed my passion I'd pick something like game design. But if I went the pragmatic route and went with the safe/timeless option, it would probably be lawyer. High barrier of entry, but good pay and they'll always be in demand. That said the high IQ would be a MUST for this because there are people who are above average in IQ, studied law, got a degree, but just couldn't pass the bar, they just failed it over and over. I knew a guy like that....completely broke him.
And if I could just wave a magic wand and get any job that exists on earth, it would either be vice president or ambassador to Switzerland or some other safe first world country where no major geopolitical events happen. Lofty title with a high salary but not having to really do anything. Only problem is to get the former (VP), you need a successful political career which involves a lot of work, and in order to get the latter (ambassadorship) you need to be a big donor.
