Some portion of humanity would still probably survive in underground bunkers and shelters during a global nuclear war and emerge after it is over and manage the after effects like nuclear winter.

Also a nuclear war at worst would only sterilize the planet's surface for a few years. It takes a lot more energy to make the earth explode.
